The UK weather has been haywire with sudden downpours, big freezes and unexpected warm days. Freezing fog closed airports and snow blocked roads. Millions of people across the country were shivering due to wintry conditions. Hopefully the weather will start to get warmer, but there’s more cold and snow predicted, and it wouldn’t be the first time that we’ve had an arctic February…
The best antidote to the winter cold – apart from a first class flight to the Caribbean – is a good thick soup that sticks to your ribs. One of our players sent us a great recipe for a healthy leek and potato soup that won’t break the bank and shouldn’t cause you to pile on the pounds either. It’s easy to prepare, can use up leftovers, and when served with freshly baked bread fills the house with welcoming aromas!
Check it out:
4 potatoes or leftover mashed potato
2 teaspoons olive oil
1/2 cup diced onion
1/2 cup diced leek
1 1/4 cups low fat chicken or vegetable stock – homemade is best!
3 tablespoons flour
2 cups skimmed milk
1/4 cup low fat sour cream
1/2 teaspoon low sodium salt
A sprinkling of freshly ground black pepper
3 bacon slices
1.5 ounces cheddar cheese, shredded
2 thinly sliced green onions
The beauty of soup is that there’s no need to stick to the precise ingredients. You can add other vegetables like carrots or celery and throw in some parsley or sage according to personal taste. If you’ve got leftovers like sausages or chicken scraps chuck them in too!
- Microwave potatoes until tender then allow to cool.
- While potatoes cook, heat oil in a saucepan, add the diced onions and leek and sweat them until they’re just beginning to change colour. Stir the flour into the mix then add 1/2 cup of milk. Pour in the stock and 1 1/2 cups of milk. Bring the pan back to the boil and keep on stirring. Cook for another minute before removing from the heat. Stir in the sour cream, salt, and pepper.
- Trim the fat from the bacon and place the remaining meat on a paper towel on a plate. Cover with a paper towel and microwave on high for 4 minutes.
- Add crumbled bacon and roughly mashed potatoes to the soup. Garnish with cheese and green onions.
Best served on a tray and eaten while playing all your favourite slots games!
